Julian Volkmer

Owner/Chef

Born and raised in Lippstadt, Germany, Julian Volkmer’s journey to the kitchen began with a push from his father and a chance newspaper ad. Trained in classic French cuisine, he honed his craft across Michelin-starred kitchens, cruise liners, and management roles before landing in Hobart in 2016.

After six years at MONA, followed by leading roles at Peacock and Jones and Cascade Brewery, Julian was drawn to an 1830s building in Hobart, inspiring WunderBar—a place where French culinary tradition meets Tasmania’s finest produce.

Beyond the kitchen, he’s a loving stepfather, devoted Dog Dad, car enthusiast, tech fanatic, and fashion lover. Whether behind the pass or the wheel, precision and passion drive everything he does.

Mateo Ortiz

Restaurant Operations Manager

Originally from Colombia, Mateo Ortiz has been a driving force in Australian hospitality for over a decade. His career includes managing some of Melbourne’s most recognised venues and earning a spot in Australia’s Top 100 Bartenders three times, as recognised by World Class.

Since moving to Tasmania in 2019, Mateo has played a key role in the success of venues like MACq01 Hotel and The Den in Salamanca. As the founder of Other Roots Hospitality, he specialises in curating unique hospitality experiences, consulting, and mentoring.

At WunderBar, Mateo brings his expertise, passion, and award-winning approach to delivering an exceptional dining experience—where great service meets unforgettable food and drink..
